Hank is standing on the bank of the Heathcote River staring intently into the water through his Polaroid shades. He is watching for whitebait passing under his guiding rods into his net. Whitebait are the juveniles of five species of fish: giant kÅkopu, banded kÅkopu, shortjaw kÅkopu, inanga, and kÅaro. They are served as a kiwi delicacy called whitebait patties. Whitebaiting is strictly regulated and only allowed for three months in spring, so Henk spends his afternoons whitebaiting for fun while he can. “There are professionals further down the river who sell their catch for a good price.” – he says “Not me, I just give it away to friends.” People passing by stop to talk to him and check his catch in his white plastic containter. Henk enjoys chatting to everyone but doesn’t miss the right second to lift his weighted net and add a handful of whitebait to the rest.
